Every holiday spread needs a show-stopping side dish, and this Triple Potato Gratin is the ideal savory seasonal treat. The earthy, rich flavors of the potatoes complement the notes of crushed red rose, tea leaf, and chocolate in the wine. It’s a perfect pairing for your holiday guests!
Ingredients
- Butter or non-stick cooking spray
- 1 lb Yukon gold potatoes, peeled and sliced
- 1 lb sweet potatoes, peeled and sliced
- 1 lb red skinned potatoes, peeled and sliced
- 8 thyme sprigs, fresh
- 1 tsp nutmeg, freshly grated
- 1½ cups heavy cream or half and half
- 1 cup Gruyére cheese, grated
- ¼ cup Parmesan, grated
- Salt and pepper to taste
Preheat oven to 375°F. Slice potatoes ⅛ inch thick and layer in a buttered 9x13 pan. Season each layer with salt, pepper, thyme sprigs, and grated nutmeg. Continue layering with potatoes and seasoning until all potatoes are used. Pour cream over the top and sprinkle with the cheeses. Bake for up to 1 hour, checking after 40 minutes, making sure the top is not browning too quickly, cover with foil if needed and continue baking until the potatoes are tender. Remove from oven and let sit for 10 minutes before serving.
