Watermelon Greek Salad is an excellent choice for a bright and light lunch or a refreshing first course to a vibrant dinner. It’s a dish that is as beautiful and colorful as it is tasty. The sweet, light texture of the watermelon is the perfect contrast to the salty kalamata olives and soft feta cheese.
It’s also the perfect bite to enjoy with a glass of wine. We love pairing this salad with our Napa Valley Viognier. The salty and tangy flavors of the feta cheese mix beautifully with the wine’s notes of white peach, nectarine, and honeydew, which is amplified by the watermelon.
What You’ll Need:
4 cups cubed seedless watermelon
½ cup kalamata olives, pitted and halved
1 cup cherry tomatoes, halved
2–3 Persian cucumbers, sliced
¼ cup thinly sliced red onion
½ cup fresh mint, chopped. Set aside some small leaves for garnish.
½ cup crumbled feta cheese
¼ cup extra virgin olive oil
1 lemon, zested and juiced
Drizzle of honey
Flaky salt and freshly ground pepper to taste
Fresh dill for garnish
How to Make It:
Cube watermelon and set aside in a large bowl.
Halve and pit olives and halve cherry tomatoes. Slice Persian cucumbers and red onion. Chop mint. Crumble feta cheese. Combine with watermelon.
Drizzle with olive oil, lemon juice, and honey. Add lemon zest. Mix and layer onto a large serving platter.
Sprinkle with flaky sea salt, freshly ground pepper, and dill for garnish. Enjoy!
