Grilled Ribeye Steak with Chimichurri Sauce

Ingredients
- 4 ribeye steaks, about 1 inch thick
- Salt and freshly ground black pepper, to taste
- Olive oil, for brushing
- For the Chimichurri Sauce
- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 3 garlic cloves, minced
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- Salt and freshly ground black pepper, to taste
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat your grill to high heat.
- Season the steaks with salt and pepper, then lightly brush with olive oil.
- Grill the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Let them rest for 5 minutes before serving.
- For the chimichurri sauce, combine all ingredients in a bowl and mix well. Taste and adjust seasoning as needed.
- Serve the steaks with chimichurri sauce drizzled on top.
