Deviled Eggs

Deviled Eggs

Deviled eggs are a classic and a staple of everything from spring brunch to Sunday dinner. They can be simple and straightforward, or extravagant and indulgent. They’re versatile and, even when they’re simple, are the perfect appetizer to elevate any party.  

We love this recipe because it’s a perfect middle ground between basic and elaborate. It’s light enough for a brunch or appetizer, but hearty enough to be a side dish with a savory dinner. And, it’s delicious. These deviled eggs are packed with creamy, tangy, and savory flavors that will impress your guests.  

We also love our spin on deviled eggs because they’re the perfect pairing for a bottle of Stags’ Leap Winery’s 2023 Napa Valley Sauvignon Blanc. 

What You’ll Need 

  • 12 large eggs 

  • ⅓ to ½ cups mayonnaise  

  • 1 Tbsp Dijon mustard 

  • 1 pinch cayenne pepper 

  • Salt and white pepper  

  • 1 to 2 Tbsp mascarpone cheese or butter, room temperature 

  • 1 pinch smoked paprika 

  • 1 pinch smoky sea salt or chipotle chili flakes 

  • Fresh herbs and edible flowers  

How to Prepare 

Fill a large pan with about one inch of water, then place eggs in. Bring to a boil over high, then immediately remove from heat and cover. Let stand for 12 minutes. Drain eggs and rinse under cold water. Let cool completely. Peel eggs. 

Halve the eggs and carefully remove yolks. Set the whites aside on a platter. Place yolks in a food processor with mayonnaise, Dijon mustard, cayenne, a pinch or two of salt and white pepper, and mascarpone or butter. 

Blend until smooth. Taste and adjust salt and pepper as needed. Transfer the mixture to a piping bag fitted with the desired tip or use a medium sandwich bag and snip one corner. Pipe the filling into the egg white halves. 

Garnish with fresh herbs and edible flowers. Sprinkle with sea salt or chipotle flakes.
