For Bourbon sauce
Ingredients
- ½ cup honey
- 2 Tbsp brown sugar
- 1 Tbsp tomato paste
- ¼ cup apple cider vinegar
- ¼ tsp cayenne pepper
- 1 Tbsp smoked paprika
- 2 tsp mustard powder
- 1 Tbsp bourbon
Place honey, brown sugar, tomato paste, apple cider vinegar, cayenne pepper, smoked paprika, and mustard powder in a small saucepan over medium heat and stir to combine. Bring to a simmer and cook for about 5 minutes until thick. Turn off heat, add bourbon, stir to combine. Set aside to cool.
Brisket
Ingredients
- 2-3 lb beef brisket
- 1 red onion, quartered
- 3 fresh bay leaves
- 8 fresh thyme sprigs
- 8 garlic cloves, smashed
- ½ tsp chili flakes
- 1 tbsp peppercorns
- 3-4 cups beef stock
- ½ cup apple cider vinegar
- 1 cup bourbon
Preheat oven to 325°F. Place the brisket with fat side down in a roasting pan. Add all ingredients to the pan with the beef. Cover with foil and roast for 3 hours or until tender. Remove brisket from pan, slice into ½ inch pieces and serve with bourbon sauce.
