Tasting Notes

The 2015 Coombsville Cabernet Sauvignon is a beautiful expression of Cabernet coming from this relatively cooler appellation within the Napa Valley. The wine is full of ripe juicy blackberry, black cherry and plum, with hints of more savory characteristics like vanilla, clove, coffee, leather and spice from the well-integrated oak ageing. This Cabernet has amazing structure with a smooth, plush and velvety mouth filling texture backed up by incredible balance and depth. The wine is generous, concentrated and complex unfolding with layers of fine tannins and well-integrated oak notes that persist through the tremendously long bittersweet chocolate finish. This is a Cabernet lovers Cab that will age for many years to come.

Winemaker Christophe Paubert has always admired the Cabernet Sauvignon fruit from Coombsville for its concentration and fresh aromatics. Year after year the appellation yields some of the most concentrated and distinctive Cabernet Sauvignon in Napa Valley, and the 2012 vintage marked the inaugural release of this small-lot bottling. This wine captures a pure expression of Napa’s southeastern corner and its unique elevation and cooler terroir. The majority of the blend comes from Garvey Vineyard, and long-standing relationships with some of the most highly regarded growers in Coombsville ensure this wine exemplifies the excellent structure, concentrated fresh flavors and significant tannins of this celebrated appellation.

Winemaking Notes

This small bottling of Coombsville Cabernet Sauvignon is a barrel selection of the most expressive lots from this highly regarded appellation. This blend was fermented separately in French oak barrels (75% new) for 18 months and blended just prior to bottling. Custom-toasted, very low impact barrels of new French oak were hand-selected, which supported the wine during maturation but did not impart excessive flavors. Keeping the lots separate throughout fermentation and aging allowed Christophe to monitor and evaluate each lot individually, coaxing each to its maximum potential and complexity.

Vintage Notes

After three years of plentiful harvests, the 2015 vintage resulted in a less abundant crop, but the quality remained exceptional.  The mild, dry spring conditions promoted an early bud-break and minimal heat during summer allowed the fruit to ripen at a steady pace through picking, which began a few days earlier than 2014.  The drier-than-normal conditions contributed to the smaller berry size and low yields, resulting in wines with outstanding concentration and flavor, making the overall season ideal for producing Cabernet Sauvignon of wonderful quality.
