Maceration followed suit for each of the three varietals, which allowed Winemaker Christophe Paubert to monitor and evaluate each lot individually, coaxing each varietal to its maximum potential. This unique composition was carefully chosen and fermented separately in high quality French oak barrels for 18 months. The Cabernet Sauvignon aged in new French oak barrels while the Petite Sirah and Merlot went to seasoned French oak. The final wine was blended just prior to bottling.
