Great food and wine sustain us best when produced with care and shared with friends. Our favorite fig and goat cheese flatbread feature sweet figs, caramelized onions, creamy goat cheese, and fresh arugula for a sweet and savory meal to transition from summer to fall.
Why figs you may ask? Figs are delicious and have a sweet honey flavor, with soft flesh that adds crunch from tiny seeds, plus they are a source of iron and other essential vitamins and minerals. The sweetness of the figs blended with the creamy goat cheese will have you wondering if you are eating dinner or dessert, and bonus this flatbread happens to look stunning and is a simple way to impress your guests. Don't forget to add the wine.
Our fig and goat cheese flatbread pairs with all of our Cabernet Sauvignon options, but we prefer our Stags' Leap Oakville Cabernet. Enjoy this pairing with friends on your patio, as autumn can bring some of the warmest and most beautiful days of the year.
Ingredients
• 3-5 Fresh figs
• Flatbread- regular, grain-free, or whole grain
• 2 cups fresh arugula
• 2 ounces goat cheese
• ¼ cup caramelized onions
• 2 tablespoons extra virgin olive oil, divided
• Salt and pepper to taste
• Pine nuts (optional)
• 1 teaspoon balsamic reduction (optional)
Instructions
1. Preheat the oven to 400F. Brush the flatbread with half of the olive oil. Add goat cheese and spread evenly. Add the onions and figs on top.
2. Bake for 10-12 minutes or until the goat cheese melts and the edges of the flatbread brown.
3. During the last 2 minutes, toss the arugula with the remaining half of olive oil and salt and pepper to taste in a small bowl until the arugula is lightly dressed.
4. Remove the flatbread from the oven and top with the dressed arugula. Optional, drizzle balsamic reduction and add pine nuts.
